Not so Traditional Christmas Cookies
The Christmas season is a time for cookies! Traditionally the flavors that are popular to make for Christmas are either sugar cookies or some variation of peppermint. However, in my family we love to make peanut butter cookies during this time of year! So, I’m sharing the recipe we use to make our delicious peanut butter cookies!
½ cup of granulated sugar
½ cup of packed brown sugar
½ cup of creamy peanut butter
½ cup of softened butter
1 ½ cups of all-purpose flour
¾ teaspoon of baking soda
½ teaspoon of baking powder
Additional granulated sugar to roll cookie dough in
36 Reese mini peanut butter cups or 36 Hershey kisses
Preheat the oven to 375 degrees.
In a large bowl, mix the granulated sugar, brown sugar, peanut butter, softened butter, and the egg either with an electric mixer or by hand until fully blended.
Stir in the flour, baking soda, and baking powder until a dough forms.
Shape the dough into 1 inch balls and roll them around on a plate of sugar.
Place them on a cookie sheet about 1-2 inches apart from each other.
Put the cookies into the oven for 8-10 minutes, keep an eye on them towards the end of the time, so they don’t get too crispy. Take them out when they look like they are almost done.
Remove the cookies from the cookie sheet and place them onto a mat or cooling rack.
Immediately press a Reese's cup or Hershey kiss directly into the center of the hot cookie.
These cookies are very simple to make and enjoy! Overall, the whole process took about 30 minutes, and it was really fun. The cookies turned out amazing and tasted absolutely awesome. This was also a very easy batch of cookies to make for someone who might not be an expert at baking. Try this recipe out for some super yummy cookies!
